Is this a 2 oven Aga? If it is, then put your sponge tins into the large roasting tin and hang it from the lowest runners in the top oven. Slide the cold plain shelf onto the 2nd runners above. You are creating an oven within an oven and the sponge will have time to rise before the top sets as it cooks.
This is how I advise cooking all cakes etc in a 2 oven Aga and it works well.
